What is the first spirit that comes to mind when you think of Alberta? Would we be right if we guessed a whisky? How about craft distilleries opening up in the province? Your next suggestion would probably be a vodka and then maybe a gin.
But what about rum? Or Calgary-made rum to be exact.
We have a local distillery that’s been pouring up one product since it first opened in 2016. Two years in, you wouldn’t think it would be any secret, but just in case nobody else has let the cat out of the bag for you, let me introduce you to Secret Barrel Distillery
Rum can be made of two products – sugar cane juice or a by-product of sugar cane juice, molasses. SBD’s rum is made with sugar cane liquor imported from Guyana. It’s distilled and bottle locally with Highwood Distillers. It’s barrel-aged for a year and filtered. Rum tends to be more of a favourite amongst newer drinkers because it’s sweeter than most other spirits. In this particular rum, you can expect to taste notes of vanilla and butterscotch.
We recently featured Secret Barrel Distillery rum in our last cocktail class and mixed it up in a rhubarb daiquiri – so refreshingly Albertan in the summer.

2 oz Secret Barrel Rum
1 oz rhubarb simple syrup
0.5 oz fresh lime juice
Combine all ingredients in a cocktail shaker and shake well for 7-8 seconds. Fine strain (this means use a fine strainer underneath your normal cocktail shaker to catch any extra shards of ice that make it through the strainer’s larger holes) into a chilled cocktail glass. Garnish with a curl of rhubarb.
